An Immaculate Vineyard and Winery
With its majestic surrounds, the Millbrook property, which is home to one of the largest vineyards in the Perth Hills wine region, is truly rich in beauty. Chardonnay, Viognier, Petit Verdot, Shiraz, Cabernet Sauvignon, Merlot and Nebbiolo are currently under vine in the 20-acre vineyard, and the winery has been specially designed for small-batch, quality wine production. The split-level construct is both compact and efficient, allowing the gravity transfer of juice and wine, and the winery’s temperature-controlled barrel halls mature the wines—in the finest French and American oak barrels—under optimum conditions.
Viticulture
To protect Millbrook’s pristine environment, modern and sustainable viticultural practices are utilised. Vines are planted on undulating slopes to optimise drainage and control growth, with the emphasis being on fruit quality, rather than yield. All pruning and picking is undertaken by hand, and the vines are irrigated only when required to ensure that fruit achieves optimal ripeness and flavour development.

In addition to the vines lining the steep slopes, the Millbrook property incorporates an active orchard, an olive grove and a one-acre garden featuring over 100 varieties of heirloom vegetables, which are handpicked daily and feature prominently in the Millbrook restaurant’s magnificent seasonal menu.
